For me, homemade soups are a comfort food, especially in the middle of a cold Canadian winter. This low carb beef teriyaki soup is delicious and is a great for the Paleo diet since it only contains 13.7g of carbs per big bowl and is jam packed with vitamins and minerals.
Most people think homemade soup takes a long time to make. The beauty of the low carb beef teriyaki soup is that it is ready in 10-15 minutes. You can’t get much better than that! Serve with a big leafy Asian salad and you have a wonderful meal.
It does contain soy sauce though so it is not totally legume free.
Low Carb Beef Teriyaki Soup
6 cups beef broth (prepared at home from soup bones)
1 lb leftover lean roast beef
2 tbs soy sauce
1 tbs minced fresh ginger
3 cloves garlic, minced
4 mushrooms, thinly sliced
1 medium carrot, thinly sliced or shredded
1 1/2 cups baby bok choi, chopped
2 cups bean sprouts (topping)
4 green onions, chopped (topping)
Place everything in a soup pot except the toppings. Bring to a boil, reduce heat and simmer for 10-15 minutes.
To serve, ladle the soup into big bowls and top each one with chopped green onion and a generous handful of fresh bean sprouts. This low carb beef teriyaki soup will soon become one of your favorites!
