A low carb breakfast can be a challenge if you are in a hurry, as most of us are in the morning. My solution is to make up this breakfast casserole on the weekend and then all I have to do is pop it in the microwave on weekdays for an instant low carb breakfast packed full of goodness.
This low carb breakfast is so easy to make. Basically you are making a big baked omelet loaded with protein and vitamins. It’s an easy way to sneak in an extra serving of veggies into your Paleo diet too.
Low Carb Breakfast Casserole Recipe
1 lb lean pork, ground
1/4 c fresh basil, chopped
1/2 c fresh parsley, finely chopped
1 c sliced fresh mushrooms
1 large green onion, chopped
2 cloves garlic, minced
1/2 tsp dried thyme
1 c chopped broccoli
1 c kale, chopped
1/2 cup sweet red peppers, chopped
1/2 c carrots, thinly sliced or chopped
12 large eggs, preferably Omega 3 enriched
1/4 c water (or milk if you eat dairy)
salt and pepper to taste
Preheat oven to 350F
In a heavy frying pan brown the ground pork adding salt and pepper to taste and drain off excess fat. Remove from heat and stir in the basil, parsley, garlic and thyme.
Spread the meat evenly in the bottom of a 9×13 baking dish that has been lightly sprayed with non-stick cooking spray.
Layer your veggies over the meat. Beat the eggs with the water (or milk) and salt and pepper to taste until well beaten. Pour the eggs over the layers in the baking dish.
Bake in the oven for 30 minutes or until the eggs are cooked in the center. Optional, you can sprinkle a little grated cheese over the top if you eat dairy but it isn’t necessary.

Variations: this low carb breakfast recipe is really a blank slate. Feel free to experiment with it. Add your favorite veggie combinations or just whatever you have on hand. Add some chili flakes to the meat if you like it spicy. You can even substitute the ground pork for chicken, turkey, beef or your favorite breakfast sausage. The whole idea is to give you a quick low carb breakfast that fits into your Paleo diet.
