Low Carb Caesar Salad Dressing

low carb caesar saladI seriously needed a low carb Caesar salad dressing as this is one of my faves. I remembered a dressing my grandmother used to make that is very similar that I always loved and adapted it to be low carb.

It does contain dairy though so if you are sworn off dairy this recipe is not for you.

Low Carb Caesar Salad Dressing

(makes 8 servings)

Ingredients:

1 c cottage cheese, lowfat, 1% milkfat

1 c real mayonnaise

1-3 cloves garlic, minced (depending on how garlicky you like it)

1/2 tsp cracked black pepper

Directions:

Mix all ingredients together. If you don’t like the chunky texture you can buzz it in a blender or food chopper until smooth.

Toss with greens, top with bacon bits and enjoy your low carb Caesar salad!
