1 c mushrooms, chopped

2 c romaine lettuce (or your favorite leafy greens)

1/4 c dried pine nuts

1/4 c dried sunflower seeds

Optional: berries, raisins, pomegranate or dried cranberries for a little hint of sweetness

Dressing:

1 avocado, mashed or pureed

4 tbsp cold pressed flaxseed oil

4 tbsp olive oil

1/4 c fresh squeezed lemon juice
