Paleo sweet potato soup recipeThis Paleo Sweet Potato Soup recipe is just the right blend of sweet and spicy. Perfect for a cold wintery day. I love spicy food, not only is it tasty, it also is good for speeding up your resting metabolism. This has a bit of an Asian taste with spur chili peppers and just a hint of cumin. Very different from my sweeter version that taste more like pumpkin pie (I’ll get that one up here eventually) If you don’t have sweet potato, you can substitute squash and it is equally as good.

Paleo Sweet Potato Soup Recipe

Ingredients:

1 sweet potato

3 cups chicken broth, Organic low sodium

1/4 cup sweet onion, chopped

2 spur chilies, chopped fine, take seeds out if you do not like it too spicy or leave seeds in if you like it hot

1/2 tsp cumin

salt and pepper to taste

1 c coconut milk

Directions:

Peel and dice the sweet potato. Place everything except the coconut milk in a saucepan. Bring to a boil, reduce heat and simmer until the sweet potato is cooked and the liquid is reduced by half. You can either just mash everything if you do not mind a bit more rustic soup texture or you can put it in the blender till smooth. Return to the pan and add the coconut milk. Heat until warm. Do not bring to a boil again or your coconut milk may turn oily. Spoon into soup bowls and garnish with cilantro if you like.
