Paleo chocolate ice cream recipeDon’t you just love it when you create something awesome totally by accident? That is how this Paleo Chocolate Ice Cream Recipe came to be. Oh, and it only takes 3 ingredients and about 1 minute to whip up. (except for the chill time)

Originally I was trying to make a pudding and I did…this recipe is actually a double duty recipe because it can be pudding or ice cream. Anyways, I made this yummy pudding for a treat but I knew if I kept it handy I would eat it everyday and because it isn’t exactly low carb I didn’t want that to happen so I decided to see if it would freeze well. A couple of days later I had a chocolate craving and that pudding in the freezer was calling to me! So I grabbed a serving and couldn’t wait for it to thaw….you girls know what I am talking about! To my surprise it was the creamiest and most luscious ice cream ever! Ppppphhhhh…. So much for putting it in the freezer to prevent temptation. ๐Ÿ˜€

half pint jarsHere is a little tip. Use the little half pint fruit preserve jars to store your pudding/ice cream in. This will do 2 things for you.

  1. Portion control! ๐Ÿ™‚ Because it is a “treat” you don’t want to overdo it. If you have just a nice little portion you are less likely to sit and eat a whole batch.
  2. Because it can double duty as pudding, if you store it in little jars it can be taken out of the freezer and popped in a lunch bag. It will keep the rest of your lunch cold and it is a nice dessert treat that will make a boring bagged lunch more exciting.

Paleo Chocolate Ice Cream Recipe

(yield 4 servings)


1 c dark chocolate chips (Kraft or Nestle’s are gluten-free)

1 can coconut milk

2 tbsp coconut oil (preferred) or butter


Combine everything in a saucepan and warm on medium low heat just until chocolate chips are melted. Stirring constantly. This only takes short time because the chips begin to melt as soon as the temperature gets above room temp. Once the chips are all melted, use a hand mixer or stick blender to blend it thoroughly. Pour into jars making sure you leave enough head space at the top to allow the mixture to expand in the freezer. Allow to cool completely and then freeze at least 4 hours.

I have also substituted butterscotch chips in thisย Paleo Chocolate Ice Cream Recipe and it was very yummy but I still think chocolate is my favorite. I will be experimenting more in the summer with adding fruit and white chocolate chips to come up with other flavors.
